We designed this 270m² modern Japanese restaurant and bar in the heart of Valletta as a 135-cover dining destination, with a 20-cover private dining room and two distinct bar spaces. The project transforms a constrained heritage site into an immersive setting for high-end Nikkei cuisine.

Set within the lower ground floor of a historic corner building in Valletta’s old town, the project began with a complex brief. Our client wanted a contemporary Japanese restaurant and bar with capacity for 135 covers, a 20-cover private dining room, a spritz bar at entrance level and a lounge bar adjoining the restaurant below. The principal challenge was how to give the venue a strong presence at street level despite the site’s limited frontage and largely concealed lower ground floor position.
Our design turns the arrival sequence into the defining spatial experience. At street level, the spritz bar draws people in from Valletta’s busy streets and signals the restaurant’s presence. From there, guests move down into a more intimate and carefully lit interior, where the main dining room, lounge bar and private dining room unfold as a connected sequence of spaces. This transition from bright exterior to atmospheric interior helps establish a clear sense of occasion.
The material palette responds to the restaurant’s Japanese-Peruvian, or Nikkei, culinary identity with a layered and theatrical interior. A sustainably sourced inky black timber screen wraps the restaurant and lounge bar, forming a cage-like enclosure with a fine pattern derived from dragonfly wings. Above the triple-height entrance, 40 paper-thin Japanese lanterns create a dramatic focal point, while a large bespoke koi mural brings depth and visual focus to the end wall.
AKI adds a distinctive contemporary hospitality destination to Valletta’s historic centre. Within a compact footprint, it creates a memorable interior that combines strong identity, spatial drama and a clear sense of arrival.
